Winter Soup

I just love a bowl of hearty, warm soup in winters. Especially for dinner. Lately, I have been trying to load a lot of veggies and protein using chicken or bone broth as my base. This one came out pretty good. Do try it out. Check out the video for the recipe at the end.

Winter Soup

This delicious and wholesome soup will leave you so full that by the time you reach your actual meal, there will be very little room left. Who doesn't love warm soups in winters. Ingredients

Veggies

  • 2 Cloves Garlic, chopped
  • 1/2 Inch Ginger, chopped
  • 2 Stalk Scallions
  • 1 Stalk Celery
  • 1/2 Red bell pepper, chopped
  • 1 Head Baby bok choy, chopped roughly
  • 1/4 cup Sweet corn, boiled and semi mashed

Condiments

  • 1 tbsp Soy sauce optional to make it gluten free
  • 1/2 tbsp Black pepper

Protein

  • 1/3 cup Boiled chicken, shredded

Base

  • 2 cups Chicken stock or bone broth

Instructions

  • Heat ghee in a deep bottomed dish
  • Saute the chopped ginger and garlic for few seconds
  • Add in the green part of the scallions and saute for less than a minute
  • Mix in the veggies next one by one (Red bell pepper, celery and bokchoy). Saute the mix for a minute
  • Add in the broth and let it simmer on low for 10 minutes
  • Next add the chicken and stir
  • Sprinkle the black pepper powder and optional step is to add the soy sauce
  • Another optional step here is to add the semi mashed sweet corn mix
  • Simmer for another 5-8 minutes
